Ingredients

  • 2 ½ tsp baking powder
  • 1/2 tsp salt
  • 8 tbsp unsalted butter (diced into 1/2-inch cubes, kept chilled)
  • 1/2 cup heavy cream
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (for brushing the top)
  • Coarse sanding sugar (for sprinkling on top)

Instructions

  1. Start by lining your baking pan with parchment paper and preheating your oven to 400°F.
  2. Combine the flour, sugar, baking powder, and salt in a food processor.
  3. Incorporate the cold, diced butter into the dry mix and pulse until it resembles damp sand.
  4. Whisk together the egg, heavy cream, and vanilla extract in a separate bowl.
  5. Create a well in the center of the dry mixture and pour the wet ingredients into it.
  6. Mix until a dough forms but avoid overworking it.
  7. Shape the dough into a ball, flatten it into a 7-inch circle on a floured surface.
  8. Cut the circle into eight wedges.
  9. Arrange the scones on the baking pan, brush with heavy cream, and sprinkle with sanding sugar.
  10. Bake for 18-22 minutes or until golden brown.

Notes

Chill the dough for about 15 minutes before baking for a better texture. Feel free to experiment by adding fruits or chocolate chips.
