- 1/3 cup granulated sugar
- 2 ½ tsp baking powder
- 1/2 tsp salt
- 8 tbsp unsalted butter (diced into 1/2-inch cubes, kept chilled)
- 1/2 cup heavy cream
- 1 egg
- 1 tsp vanilla extract
- 2 tbsp heavy cream (for brushing the top)
- Coarse sanding sugar (for sprinkling on top)
Instructions
- Start by lining your baking pan with parchment paper and preheating your oven to 400°F.
- Combine the flour, sugar, baking powder, and salt in a food processor.
- Incorporate the cold, diced butter into the dry mix and pulse until it resembles damp sand.
- Whisk together the egg, heavy cream, and vanilla extract in a separate bowl.
- Create a well in the center of the dry mixture and pour the wet ingredients into it.
- Mix until a dough forms but avoid overworking it.
- Shape the dough into a ball, flatten it into a 7-inch circle on a floured surface.
- Cut the circle into eight wedges.
- Arrange the scones on the baking pan, brush with heavy cream, and sprinkle with sanding sugar.
- Bake for 18-22 minutes or until golden brown.
Notes
Chill the dough for about 15 minutes before baking for a better texture. Feel free to experiment by adding fruits or chocolate chips.
