- 1 rotisserie chicken (fully cooked, approx. 2 1/2 pounds, still on bone, optional)
- 12 cups chicken broth
- 4 celery stalks, chopped
- 4–5 carrots, sliced
- 1 onion, diced
- 1 tsp garlic powder
- 2 tsp dried parsley
- 1 tsp oregano
- 1/2 tsp thyme
- 1 bay leaf
- 1/2 tsp sea salt
- 1 tsp cracked pepper
- 2 cups dry pasta
- 1/4 cup corn starch (can use arrowroot powder)
- 1 tbsp olive oil (for stove top)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, cooking until it becomes translucent, about 3-4 minutes.
- Stir in the chopped celery and sliced carrots, cooking for an additional 5 minutes to soften slightly.
- Incorporate the garlic powder, dried parsley, oregano, thyme, bay leaf, sea salt, and cracked pepper, stirring together for about a minute.
- Pour in the chicken broth and bring to a gentle simmer.
- Shred the rotisserie chicken, removing the meat from the bone and discarding the bone if desired.
- Add the shredded chicken and dry pasta into the pot, cooking until the pasta is tender, about 8-10 minutes.
- Mix the corn starch with a bit of cold water to create a slurry, then stir this into the soup to thicken it slightly, cooking for an additional 2 minutes.
- Remove the bay leaf before serving.
Notes
Serve warm, garnished with freshly chopped herbs. Paired nicely with crusty bread.
