  • 1 rotisserie chicken (fully cooked, approx. 2 1/2 pounds, still on bone, optional)
  • 12 cups chicken broth
  • 4 celery stalks, chopped
  • 45 carrots, sliced
  • 1 onion, diced
  • 1 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1 bay leaf
  • 1/2 tsp sea salt
  • 1 tsp cracked pepper
  • 2 cups dry pasta
  • 1/4 cup corn starch (can use arrowroot powder)
  • 1 tbsp olive oil (for stove top)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, cooking until it becomes translucent, about 3-4 minutes.
  3. Stir in the chopped celery and sliced carrots, cooking for an additional 5 minutes to soften slightly.
  4. Incorporate the garlic powder, dried parsley, oregano, thyme, bay leaf, sea salt, and cracked pepper, stirring together for about a minute.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Shred the rotisserie chicken, removing the meat from the bone and discarding the bone if desired.
  7. Add the shredded chicken and dry pasta into the pot, cooking until the pasta is tender, about 8-10 minutes.
  8. Mix the corn starch with a bit of cold water to create a slurry, then stir this into the soup to thicken it slightly, cooking for an additional 2 minutes.
  9. Remove the bay leaf before serving.

Notes

Serve warm, garnished with freshly chopped herbs. Paired nicely with crusty bread.
