- 2 oranges, thinly sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/3 cup hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- 1 clove garlic, minced
- Juice of 1 orange
Instructions
- Whisk together the hoisin sauce, soy sauce, honey, rice vinegar, grated ginger, minced garlic, and orange juice in a small bowl until well combined.
- Arrange the cod fillets on the prepared sheet pan. Drizzle with olive oil and season with salt and pepper.
- Brush the glaze generously over each cod fillet, ensuring they are well coated.
- Place the sliced orange pieces around and partially under the cod fillets.
- Bake in the preheated oven for 18-20 minutes or until the cod flakes easily with a fork.
- Serve immediately, transferring the cod and orange slices to plates and drizzling any remaining glaze over the top.
Notes
Marinate the cod in the glaze for 30 minutes before cooking for enhanced flavor. Store leftovers in a sealed container in the refrigerator for up to two days.
