Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut
  • 2 cups spinach or kale
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
  2. Stir in the garlic and cook for an additional minute until fragrant.
  3. Add the vegetable broth, diced tomatoes, zucchini, and green beans. Bring to a boil.
  4. Reduce the heat and add the spinach or kale, thyme, and basil. Simmer for 15-20 minutes, until the vegetables are tender.
  5. Season with salt and pepper to taste before serving.

Notes

Make a large batch and store leftovers in an airtight container for up to four days. This soup also freezes beautifully for later enjoyment.
