- 2 celery stalks, diced

- 1 can (14.5 oz) diced tomatoes
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut
- 2 cups spinach or kale
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the garlic and cook for an additional minute until fragrant.
- Add the vegetable broth, diced tomatoes, zucchini, and green beans. Bring to a boil.
- Reduce the heat and add the spinach or kale, thyme, and basil. Simmer for 15-20 minutes, until the vegetables are tender.
- Season with salt and pepper to taste before serving.
