Instructions
- In a blender, combine the cottage cheese, eggs, oat flour, baking powder, vanilla extract, and salt. Blend until smooth.
- Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with your favorite toppings.
Notes
Allow the blended batter to rest for a few minutes before cooking for better texture. Experiment with toppings like blueberries, bananas, or cinnamon.
