Instructions

  1. In a blender, combine the mashed banana, cottage cheese, eggs, rolled oats, baking powder, cinnamon, and salt.
  2. Blend until smooth, about 30 seconds.
  3. Let the batter rest for 5 minutes to thicken.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour ¼ cup batter for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip carefully and cook until golden brown, about 1-2 minutes more.
