Ingredients

- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup fresh strawberries, sliced
- Additional strawberries for serving
- Maple syrup for serving
Instructions
- In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- In a small bowl, blend the cream cheese and powdered sugar until smooth.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of pancake batter onto the skillet.
- Add a spoonful of the cream cheese mixture and a few slices of strawberries on top of the batter.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat for remaining batter.
- Serve stacks of pancakes topped with additional strawberries and syrup.
