  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, sliced
  • Additional strawberries for serving
  • Maple syrup for serving

Instructions

  1. In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. In a small bowl, blend the cream cheese and powdered sugar until smooth.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of pancake batter onto the skillet.
  6. Add a spoonful of the cream cheese mixture and a few slices of strawberries on top of the batter.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Repeat for remaining batter.
  9. Serve stacks of pancakes topped with additional strawberries and syrup.
