A vibrant and nourishing frozen pea soup that is quick to make and perfect for any occasion.
Ingredients

- 2 tablespoons extra-virgin olive oil
- 1 diced yellow onion (about 1½ cups)
- 3 cloves minced garlic
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- ½ teaspoon fine sea salt
- 6 cups vegetable broth
- 1½ cups grated potato
- 2 lbs frozen peas (around 7 cups)
- 4 cups baby spinach (optional)
- Black pepper (to taste)
Instructions
- Warm the extra-virgin olive oil in a large pot over medium-high heat.
- Add the diced yellow onion and sauté until translucent (approximately 3 minutes).
- Stir in the minced garlic, dried thyme, and fine sea salt. Cook for another minute until fragrant.
- Pour in the vegetable broth and stir in the grated potato. Cover the pot slightly ajar and bring it to a boil.
- Boil for about 10 minutes until the potatoes are soft.
- Add the frozen peas and cook until bright green and warmed through (about 2 to 3 minutes).
- Remove from heat and stir in the baby spinach if using until wilted.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer batches to a blender.
- Season with black pepper and more salt if needed, then enjoy!
Notes
For a creamier texture, consider adding a splash of plant-based milk or cream. Store leftovers in airtight containers for up to three days.
