Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 diced yellow onion (about 1½ cups)
  • 3 cloves minced garlic
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • ½ teaspoon fine sea salt
  • 6 cups vegetable broth
  • 1½ cups grated potato
  • 2 lbs frozen peas (around 7 cups)
  • 4 cups baby spinach (optional)
  • Black pepper (to taste)

Instructions

  1. Warm the extra-virgin olive oil in a large pot over medium-high heat.
  2. Add the diced yellow onion and sauté until translucent (approximately 3 minutes).
  3. Stir in the minced garlic, dried thyme, and fine sea salt. Cook for another minute until fragrant.
  4. Pour in the vegetable broth and stir in the grated potato. Cover the pot slightly ajar and bring it to a boil.
  5. Boil for about 10 minutes until the potatoes are soft.
  6. Add the frozen peas and cook until bright green and warmed through (about 2 to 3 minutes).
  7. Remove from heat and stir in the baby spinach if using until wilted.
  8. Use an immersion blender to blend the soup until smooth. Alternatively, transfer batches to a blender.
  9. Season with black pepper and more salt if needed, then enjoy!

Notes

For a creamier texture, consider adding a splash of plant-based milk or cream. Store leftovers in airtight containers for up to three days.
