Ingredients

  • 1 cup grated zucchini
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Combine the grated zucchini, sugar, oil, and vanilla extract in a large bowl.
  3. Mix the flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into bars.

Notes

For best results, fold in frozen blueberries while still frozen to help maintain their shape.
