  • 2 medium cucumbers (about 8 to 9 inches long, washed and ends trimmed)
  • 2 cloves garlic (peeled and lightly crushed)
  • 1 teaspoon mustard seeds (divided)
  • 1 teaspoon black peppercorns (divided)
  • 2 heaping teaspoons fresh chopped dill (divided)
  • 1 cup white distilled vinegar (5% acidity minimum)
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt

Instructions

  1. Start by slicing the cucumbers. For spears, halve each cucumber crosswise and then cut each half into 8 spears, about 3 to 4 inches long. If you prefer round slices, cut each cucumber into 16 rounds, approximately ¼ inch thick.
  2. Tightly pack the cucumber pieces into the jars, leaving some space at the top.
  3. Add one clove of garlic to each jar, tucking it down among the cucumbers.
  4. Divide the remaining mustard seeds, peppercorns, and dill evenly between the jars. Each jar should receive ½ teaspoon of mustard seeds, ½ teaspoon of peppercorns, and 1 teaspoon of dill.
  5. In a small saucepan, combine the vinegar, water, sugar, and salt. Bring this mixture to a boil, stirring frequently until the sugar and salt completely dissolve.
  6. Carefully pour the hot brine into the jars, ensuring the cucumbers are fully submerged. It’s important to fill the jars to the top because uncovered cucumbers are prone to spoilage.
  7. Allow the jars to cool at room temperature for about 30 minutes.
  8. Seal the jars with their lids and refrigerate for at least 24 hours before enjoying. The flavors will meld beautifully, making each bite a burst of garlicky dill goodness.

Notes

For best results, use fresh, firm cucumbers and adjust sugar or salt according to taste. Refrigerate for up to two weeks.
