  • 1 3-pound beef tenderloin
  • 4 tablespoons unsalted butter, softened
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Pat the beef tenderloin dry with paper towels. Trim any silver skin if needed and tie with butcher’s twine every 1–2 inches for even cooking.
  2. In a small bowl, mix the softened butter with minced garlic, chopped rosemary, and thyme until combined.
  3. Rub the beef with olive oil, then season all over with kosher salt and freshly ground black pepper.
  4. Preheat oven to 425°F (220°C). Heat a cast iron or oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 2–3 minutes per side.
  5. Remove skillet from heat and spread the garlic herb butter all over the tenderloin.
  6. Transfer skillet to the oven and roast until the internal temperature reaches 130°F for medium-rare, about 25–30 minutes.
  7. Remove from oven and rest the beef for 10–15 minutes, tented loosely with foil, before slicing.

Notes

Use a meat thermometer for accuracy and let the beef rest after roasting for optimal juiciness.
