- 2 tablespoons olive oil
- Salt
- Freshly ground black pepper
- 4 oz unsalted butter
- 1 clove minced garlic
- Juice of 1/2 lemon
- 3 tablespoons fresh parsley (finely chopped)
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon fresh chives (chopped)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Carefully place the seasoned cod fillets in the pan.
- Cook without moving them for 3-4 minutes on each side until golden.
- Remove the cod from the pan and set aside.
- Reduce the heat to medium and add the unsalted butter to the skillet.
- Stir in the minced garlic, cooking for about 30 seconds until fragrant.
- Add the chopped parsley, dill, chives, and lemon juice.
- Return the cod to the skillet and spoon the herb butter sauce over the fillets.
- Warm for an additional 1-2 minutes.
- Serve with extra sauce drizzled on top.
