A rich and aromatic butter chicken recipe that brings warmth and joy to any dining experience.

- 800g boneless, skinless chicken, cut into 3–4 cm pieces
- 2 garlic cloves, peeled and finely crushed
- 2 cm ginger, peeled and finely grated
- ½ tsp fine sea salt
- ½ tsp hot chilli powder
- 1½ tbsp lemon juice
- 75ml natural yogurt
- ½ tsp garam masala
- ½ tsp ground turmeric
- 1 tsp ground cumin
- 1–2 tbsp vegetable oil, for brushing
Instructions
- Combine chicken, garlic, ginger, salt, chilli powder, and lemon juice in a bowl. Mix well, cover with cling film, and chill for 30 minutes.
- Mix the yogurt, garam masala, turmeric, and cumin together. Add this mixture to the chicken, ensuring each piece is coated. Cover again and chill for 3-4 hours or overnight.
- Preheat the oven to 180°C (160°C fan, Gas 4). Place the marinated chicken on a grill rack set over a baking tray. Bake for 8-10 minutes.
- Brush the chicken with a little oil, turn the pieces over, and bake for another 10-12 minutes until just cooked through.
- Heat ghee or butter in a pan. Add the remaining garlic and ginger, frying for a minute. Then, add cardamom, cloves, coriander, and spices, stirring for 1-2 minutes until fragrant.
- Stir in tomato puree and lemon juice, cooking for a couple of minutes. Add the chicken pieces to the sauce, stirring well to coat.
- Add butter and cream to the pan, stirring continuously until the sauce is smooth. Taste and adjust seasoning if necessary, then transfer to a warm bowl.
Notes
Allow ample marination time for more flavorful chicken. Adjust spice levels to preference.
