- 1 lb chicken breast
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup water
- 1/2 cup lemon juice
- 1/2 cup orzo pasta
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Sauté the onion, carrots, and celery until soft.
- Add the chicken broth and water, and bring to a boil.
- Cook the chicken breast until done, then remove and shred.
- Stir in the orzo and cook until al dente.
- Return the shredded chicken to the pot, add lemon juice, salt, and pepper, and stir.
- Garnish with fresh parsley and serve hot.
