Ingredients

  • 4 Cod fillets
  • 1 cup Cherry tomatoes
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Fresh dill, chopped
  • 1/2 cup Sour cream or Greek yogurt
  • 2 cloves Garlic, minced
  • 2 tbsp Lemon juice

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss cherry tomatoes with olive oil, salt, and pepper.
  3. Place cod fillets on the grill and cook for 4-5 minutes on each side, until flaky and cooked through.
  4. In a bowl, mix sour cream (or Greek yogurt), minced garlic, chopped dill, lemon juice, salt, and pepper to create the creamy dill sauce.
  5. Serve the grilled cod topped with roasted cherry tomatoes and a drizzle of the dill sauce.

Notes

Use fresh herbs for the best flavor. Grill basket can be used for cherry tomatoes.
