- 4 Cod fillets
- 1 cup Cherry tomatoes
- 2 tbsp Olive oil
- Salt to taste
- Pepper to taste
- 2 tbsp Fresh dill, chopped
- 1/2 cup Sour cream or Greek yogurt
- 2 cloves Garlic, minced
- 2 tbsp Lemon juice
Instructions
- Preheat the grill to medium-high heat.
- Toss cherry tomatoes with olive oil, salt, and pepper.
- Place cod fillets on the grill and cook for 4-5 minutes on each side, until flaky and cooked through.
- In a bowl, mix sour cream (or Greek yogurt), minced garlic, chopped dill, lemon juice, salt, and pepper to create the creamy dill sauce.
- Serve the grilled cod topped with roasted cherry tomatoes and a drizzle of the dill sauce.
Notes
Use fresh herbs for the best flavor. Grill basket can be used for cherry tomatoes.
