- 4 ears of corn, husked
- 1/2 cup unsalted butter, softened
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat the grill to medium heat.
- In a small bowl, mix together the softened butter, lime juice, chili powder, salt, and pepper until well combined.
- Brush the corn with a little bit of the chili lime butter.
- Place the corn on the grill and cook, turning occasionally, until the corn is tender and has grill marks, about 10-15 minutes.
- Remove the corn from the grill and brush with additional chili lime butter.
- Garnish with fresh cilantro if desired and serve immediately.
Notes
For more moisture, soak the corn in water for about 30 minutes before grilling. Use a pastry brush for even butter distribution.
