  • 1/2 cup unsalted butter, softened
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat the grill to medium heat.
  2. In a small bowl, mix together the softened butter, lime juice, chili powder, salt, and pepper until well combined.
  3. Brush the corn with a little bit of the chili lime butter.
  4. Place the corn on the grill and cook, turning occasionally, until the corn is tender and has grill marks, about 10-15 minutes.
  5. Remove the corn from the grill and brush with additional chili lime butter.
  6. Garnish with fresh cilantro if desired and serve immediately.

Notes

For more moisture, soak the corn in water for about 30 minutes before grilling. Use a pastry brush for even butter distribution.
