  • 1/2 cup salted butter (1 stick)
  • 1/2 cup chopped chives
  • 2 cloves garlic, minced
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper
  • Coarse salt for seasoning

Instructions

  1. Preheat your grill to medium heat, around 400°F.
  2. Prepare the chive butter by melting the salted butter in a small saucepan over low heat. Stir in minced garlic, chopped chives, coarse salt, and black pepper until well combined. Set aside.
  3. Wash and dry the russet potatoes thoroughly. Use chopsticks or wooden spoons to hold each potato while making thin, evenly spaced cuts.
  4. Place the sliced potatoes onto a piece of aluminum foil. Generously brush the chive butter onto each potato, allowing it to seep into the cuts.
  5. Season the potatoes with coarse salt.
  6. Wrap the foil around the potatoes, ensuring they are securely enclosed.
  7. Place the wrapped potatoes on the grill. Cook for about 30-40 minutes, turning occasionally, until the potatoes are tender and golden brown.

Notes

Unwrap the foil during the last 10 minutes of grilling for a crispier finish. Consider adding fresh herbs for an enhanced flavor.
