- 1/2 cup salted butter (1 stick)

Instructions
- Preheat your grill to medium heat, around 400°F.
- Prepare the chive butter by melting the salted butter in a small saucepan over low heat. Stir in minced garlic, chopped chives, coarse salt, and black pepper until well combined. Set aside.
- Wash and dry the russet potatoes thoroughly. Use chopsticks or wooden spoons to hold each potato while making thin, evenly spaced cuts.
- Place the sliced potatoes onto a piece of aluminum foil. Generously brush the chive butter onto each potato, allowing it to seep into the cuts.
- Season the potatoes with coarse salt.
- Wrap the foil around the potatoes, ensuring they are securely enclosed.
- Place the wrapped potatoes on the grill. Cook for about 30-40 minutes, turning occasionally, until the potatoes are tender and golden brown.
Notes
Unwrap the foil during the last 10 minutes of grilling for a crispier finish. Consider adding fresh herbs for an enhanced flavor.
