Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, bell pepper, red onion, and cherry tomatoes.
- Drizzle with olive oil, sprinkle with Italian seasoning, salt, and pepper. Toss to coat evenly.
- Thread the vegetables onto skewers, alternating as desired.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
