- 2 teaspoons instant dry yeast
- 2 cups warm water (105°F–115°F)
- 1 tablespoon granulated sugar
- 1/2 cup plus 2 tablespoons extra virgin olive oil
- 4 teaspoons fine sea salt
- 7 ounces gruyère cheese, cut into small cubes
- 2 tablespoons fresh thyme leaves
- 2 teaspoons Maldon sea salt flakes
Instructions
- Combine the bread flour, instant dry yeast, granulated sugar, and fine sea salt in a large mixing bowl.
- Gradually pour in the warm water while mixing with a wooden spoon or your hands until a shaggy dough forms.
- Add 1/2 cup plus 2 tablespoons of olive oil and knead the dough for about 10 minutes until it becomes smooth and elastic.
- Shape the dough into a ball and place it in the greased bowl. Cover with a damp cloth and let it rise in a warm location for about 1 to 2 hours, or until it doubles in size.
- Transfer the dough to a greased sheet pan and gently stretch it into the pan, using your fingertips to create dimples across the surface.
- Drizzle with extra olive oil and sprinkle with gruyère cheese cubes, fresh thyme leaves, and Maldon sea salt flakes.
- Allow the focaccia to rise for another 30 minutes before baking it in a preheated oven at 400°F until golden brown, about 20-25 minutes.
Notes
For best results, ensure water temperature is optimal for yeast activation, and do not skip the resting period after stretching the dough.
