Ingredients

  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease or spray a muffin tin with cooking spray.
  3. In a large bowl, whisk together eggs, salt, pepper, garlic powder, and onion powder.
  4. Stir in the chopped vegetables and meat (if using).
  5. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until the muffins are set and slightly golden.
  7. Let them cool for a few minutes before removing them from the tin.
  8. Store any leftovers in an airtight container in the fridge or freezer.
