Ingredients

  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup almond milk (or any dairy-free milk)
  • 2 cups cauliflower florets
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. In your instant pot or slow cooker, heat the olive oil and sauté the onion, garlic, carrots, and celery until softened.
  2. Add the diced chicken and cook until no longer pink.
  3. Stir in chicken broth, almond milk, cauliflower florets, thyme, salt, and pepper.
  4. If using an instant pot, seal and cook on high pressure for 10 minutes. For a slow cooker, cook on low for 6 hours.
