- 1 lb chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup almond milk (or any dairy-free milk)
- 2 cups cauliflower florets
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Instructions
- In your instant pot or slow cooker, heat the olive oil and sauté the onion, garlic, carrots, and celery until softened.
- Add the diced chicken and cook until no longer pink.
- Stir in chicken broth, almond milk, cauliflower florets, thyme, salt, and pepper.
- If using an instant pot, seal and cook on high pressure for 10 minutes. For a slow cooker, cook on low for 6 hours.
- Stir well and serve hot.
