Ingredients

  • – 1 1/2 cups (360 ml) grated zucchini, squeezed dry (measured before squeezing)
  • – 1 large egg
  • – 1/2 cup (120 ml) unsweetened applesauce
  • – 3/4 cup (180 ml) maple syrup or date syrup
  • – 1 teaspoon (5 ml) pure vanilla extract
  • – 1 teaspoon (5 ml) baking soda
  • – 1/2 teaspoon (3 ml) aluminum-free baking powder
  • – 1/2 teaspoon (3 ml) salt
  • – 1/2 cup (60 g) cacao powder
  • – 1 3/4 cups (210 g) whole wheat flour or spelt flour, or 2 cups (240 g) all-purpose flour
  • – 3/4 cup (130 g) dairy-free chocolate chips, divided
  • – Cooking spray, I use Misto

Instructions

  1. Set your oven to a temperature of 350 degrees F, and get a 9 x 5 loaf pan ready by lining it with parchment paper and applying a light coat of cooking spray. Place it aside.
  2. In a spacious bowl, combine the zucchini, egg, applesauce, maple syrup, vanilla extract, baking soda, baking powder, and salt. Use a whisk to blend these ingredients thoroughly, ensuring any lumps in the baking soda and powder are smoothed out with an additional whisking if necessary.
  3. Incorporate the cacao powder into the mixture and whisk until it is fully mixed in.
  4. Carefully introduce the flour to the mixture, stirring gently with a spatula until just blended. Gently fold in 1/2 cup of the chocolate chips.
  5. Transfer the batter into the prepared loaf pan and evenly spread the remaining 1/4 cup of chocolate chips over the top. Place it in the oven and bake for 60-70 minutes, or until a toothpick inserted into the center emerges clean.
  6. Take the loaf out of the oven and place it on a cooling rack for about 10 minutes. Using the parchment paper as handles, lift the loaf out of the pan and allow it to cool further before slicing. Use a sharp serrated knife to cut the loaf into 10 thick slices, though 12 thinner slices are also possible, keeping in mind the top is soft and contains chocolate chips.
