Ingredients
- – 1 1/2 cups (360 ml) grated zucchini, squeezed dry (measured before squeezing)
- – 1 large egg
- – 1/2 cup (120 ml) unsweetened applesauce
- – 3/4 cup (180 ml) maple syrup or date syrup
- – 1 teaspoon (5 ml) pure vanilla extract
- – 1 teaspoon (5 ml) baking soda
- – 1/2 teaspoon (3 ml) aluminum-free baking powder
- – 1/2 teaspoon (3 ml) salt
- – 1/2 cup (60 g) cacao powder
- – 1 3/4 cups (210 g) whole wheat flour or spelt flour, or 2 cups (240 g) all-purpose flour
- – 3/4 cup (130 g) dairy-free chocolate chips, divided
- – Cooking spray, I use Misto
Instructions
- Set your oven to a temperature of 350 degrees F, and get a 9 x 5 loaf pan ready by lining it with parchment paper and applying a light coat of cooking spray. Place it aside.
- In a spacious bowl, combine the zucchini, egg, applesauce, maple syrup, vanilla extract, baking soda, baking powder, and salt. Use a whisk to blend these ingredients thoroughly, ensuring any lumps in the baking soda and powder are smoothed out with an additional whisking if necessary.
- Incorporate the cacao powder into the mixture and whisk until it is fully mixed in.
- Carefully introduce the flour to the mixture, stirring gently with a spatula until just blended. Gently fold in 1/2 cup of the chocolate chips.
- Transfer the batter into the prepared loaf pan and evenly spread the remaining 1/4 cup of chocolate chips over the top. Place it in the oven and bake for 60-70 minutes, or until a toothpick inserted into the center emerges clean.
- Take the loaf out of the oven and place it on a cooling rack for about 10 minutes. Using the parchment paper as handles, lift the loaf out of the pan and allow it to cool further before slicing. Use a sharp serrated knife to cut the loaf into 10 thick slices, though 12 thinner slices are also possible, keeping in mind the top is soft and contains chocolate chips.

- Adjust maple syrup or date syrup to increase sweetness to your preference.
