- 1/4 cup cashew butter (or peanut butter)
- 1/4 cup maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup chocolate chips
- 1 cup chocolate chips
- 1 teaspoon coconut oil
- Flaky sea salt (optional)
Instructions
- Add the almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt into a bowl. Mix everything together until you achieve a cohesive dough.
- Once the mixture looks well combined, introduce the 1/4 cup of chocolate chips and fold them into the dough.
- Grab your parchment paper and place it on a cutting board or large plate. Transfer the cookie dough onto the paper and use a silicone spatula or clean hands to press down gently, forming it into an even layer about 1/2 inch thick.
- Allow this to set aside while you prepare the chocolate topping.
- In a small bowl, combine the remaining chocolate chips and coconut oil. Microwave this mixture in 30-second intervals, stirring in between until the chocolate is fully melted.
- Pour this silky, melted chocolate over the flattened cookie dough and spread it evenly. For an added flair, sprinkle some flaky sea salt on top.
- Finally, place the entire creation in the freezer for 10 minutes to set.
