Ingredients

  • 1 cup carrots, diced

  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; sauté until they soften.
  2. Stir in garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Once the gnocchi are cooked, shred the rotisserie chicken and add it to the pot.
  6. Stir in the spinach and season with salt and pepper.
