- 1 rotisserie chicken
- 1 package gnocchi
- 4 cups chicken broth
- 2 cups spinach
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; sauté until they soften.
- Stir in garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the gnocchi and cook according to package instructions.
- Once the gnocchi are cooked, shred the rotisserie chicken and add it to the pot.
- Stir in the spinach and season with salt and pepper.
- Let the soup simmer for a few minutes until heated through, then serve warm.
Notes
