- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1/2 cup almond milk
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh or frozen blueberries
- 1 tsp vanilla extract
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the flour, protein powder, oats, baking powder, baking soda, and salt in a large bowl.
- Whisk together the honey (or maple syrup), Greek yogurt, almond milk, vanilla extract, and eggs in another bowl until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Divide the batter evenly into the muffin tin.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
