- 4 medium potatoes, diced
- 1 onion, chopped

- 1 can diced tomatoes (optional)

- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat and sauté the chopped onion until translucent.
- Add the ground beef to the skillet and cook until browned, then drain any excess fat.
- Layer the diced potatoes in a large baking dish, followed by the ground beef mixture and diced tomatoes if using.
- Season the dish with salt and pepper.
- Top everything with shredded cheese.
- Cover the dish with aluminum foil and bake for 40 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the potatoes are tender and cheese is bubbly.
