Ingredients

  • 1 cup cashews
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the garlic and mixed vegetables to the skillet and stir-fry for an additional 3-4 minutes.
  4. In a small bowl, mix soy sauce and sesame oil, then pour over the chicken and vegetables.
  5. Stir in the cashews and cook for another 2 minutes, allowing the flavors to meld.
