- 1 cup cashews
- 2 cups mixed vegetables (broccoli, bell peppers, carrots)

- 1/4 cup soy sauce
- 1 tablespoon sesame oil

- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add the garlic and mixed vegetables to the skillet and stir-fry for an additional 3-4 minutes.
- In a small bowl, mix soy sauce and sesame oil, then pour over the chicken and vegetables.
- Stir in the cashews and cook for another 2 minutes, allowing the flavors to meld.
- Serve hot over rice or noodles.
