Ingredients

  • 2 pounds beef (flank steak or sirloin)
  • 1/4 cup soy sauce (or coconut aminos for gluten-free)
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for heat)
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon salt

Instructions

  1. Slice the beef into thin strips against the grain.
  2. Mix soy sauce, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, cayenne pepper, brown sugar, and salt to create the marinade.
  3. Place beef strips in the marinade, cover, and refrigerate for at least 240 minutes or overnight for best flavor.
  4. Preheat the pellet grill or smoker to 160°F (71°C).
  5. Remove the beef from the marinade and pat dry with paper towels.
  6. Place the beef strips on the grill racks in a single layer.
  7. Smoke the jerky for 240-360 minutes until it is dry and chewy but still slightly pliable.
  8. Let the jerky cool, then store it in an airtight container.

Notes

Slice the beef against the grain for best texture. Experiment with different marinades and smoking woods for unique flavors.
