Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into slider-sized portions (about 23 inches square)
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil (for frying)
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 slider buns
  • 4 slices cheddar cheese, quartered
  • Lettuce leaves (for topping, optional)
  • Sliced tomatoes (for topping, optional)
  • Pickle chips (for topping, optional)

Instructions

  1. Cut the chicken breasts into slider-sized portions, roughly 2-3 inches square.
  2. Mix the flour with paprika, garlic powder, onion powder, cayenne, salt, and pepper in the first dish.
  3. Prepare the second dish with beaten eggs.
  4. Fill the third dish with panko breadcrumbs.
  5. Dredge each chicken piece in the flour mixture, then dip into the beaten eggs, and finally press into the panko breadcrumbs.
  6. Let the breaded chicken rest for 10-15 minutes.
  7. Heat vegetable oil in a large skillet over medium-high heat.
  8. Add the breaded chicken to the hot oil and fry for 3-4 minutes per side.
  9. Remove cooked chicken and place it on a wire rack lined with paper towels.
  10. Whisk together mayo, Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper for the sauce.
  11. Toast the slider buns lightly and spread honey mustard sauce on both halves of each bun.
  12. Place fried chicken on the bottom half of each bun and add cheese, lettuce, tomatoes, and pickles if desired.
  13. Top with the other half of the slider bun and serve immediately.
