  • 3 cups shredded cooked chicken
  • 6 large corn tortillas, quartered
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 can chopped green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Cilantro and lime wedges, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch dish.
  2. Combine the shredded chicken, black beans, diced tomatoes with green chilies, tomato sauce, sour cream, chopped green chilies, cumin, chili powder, garlic powder, salt, and pepper in a large mixing bowl.
  3. Spread the filling evenly in the prepared dish.
  4. Layer the quartered tortillas on top of the filling.
  5. Sprinkle 1 cup of shredded cheddar cheese over the tortillas.
  6. Repeat the layering process until you exhaust the ingredients, ensuring the top layer finishes with cheese.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10–15 minutes, until the cheese bubbles and turns golden brown.
  9. Let the casserole cool slightly. Garnish with fresh cilantro and serve alongside lime wedges for an extra zing.

Ensure all ingredients, especially beans and tomatoes, are well-drained to prevent sogginess. Experiment with spice levels for heat preference.
