- 6 large corn tortillas, quartered
- 1 can black beans, drained
- 1 can diced tomatoes with green chilies
- 1 cup tomato sauce
- 1 cup sour cream
- 2 cups shredded cheddar cheese

- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Cilantro and lime wedges, for garnish
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch dish.
- Combine the shredded chicken, black beans, diced tomatoes with green chilies, tomato sauce, sour cream, chopped green chilies, cumin, chili powder, garlic powder, salt, and pepper in a large mixing bowl.
- Spread the filling evenly in the prepared dish.
- Layer the quartered tortillas on top of the filling.
- Sprinkle 1 cup of shredded cheddar cheese over the tortillas.
- Repeat the layering process until you exhaust the ingredients, ensuring the top layer finishes with cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10–15 minutes, until the cheese bubbles and turns golden brown.
- Let the casserole cool slightly. Garnish with fresh cilantro and serve alongside lime wedges for an extra zing.
Notes
Ensure all ingredients, especially beans and tomatoes, are well-drained to prevent sogginess. Experiment with spice levels for heat preference.
