Description

Italian stuffed zucchini boats are filled with ground beef, aromatic herbs, and melted mozzarella, bringing comfort and nostalgia to your dinner table.


Ingredients

  • 4 small zucchinis
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1/2 medium onion, chopped
  • 2 garlic cloves, pressed
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 1/2 cups marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. Cut each zucchini in half lengthwise and scoop out the inner flesh.
  4. Place the hollowed zucchini boats in the prepared baking dish.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Add the ground beef and chopped onion, cooking until browned, about 5-7 minutes.
  7. Stir in the pressed garlic and cook for an additional minute.
  8. Add the chopped zucchini flesh, Italian seasoning, salt, and black pepper; cook for 5-7 minutes until tender.
  9. Remove from heat and stir in 1/2 cup of mozzarella cheese.
  10. Divide the mixture among the zucchini boats and top with the remaining cheese.
  11. Bake for 20-25 minutes until the zucchini is tender and the cheese is melted and golden.
