- 1 lb kielbasa sausage, sliced
- 4 cups potatoes, diced
- 2 carrots, chopped
- 1 onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Sauté the diced onion and sliced kielbasa over medium heat until the onion is translucent.
- Add the diced potatoes and chopped carrots, and stir for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer until the potatoes and carrots are tender, about 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for another 5 minutes.
- Serve hot, garnished with fresh parsley if desired.
Notes
For added depth of flavor, consider using homemade chicken broth. Leftovers taste even better the next day!
