Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the Greek yogurt, vegetable oil, egg, vanilla extract, and lemon zest in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently.
  6. Divide the batter evenly among the muffin cups, filling them about 3/4 full. If using, sprinkle the streusel topping on each muffin.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a unique twist, vary the blueberries or add raspberries. Using room temperature ingredients helps achieve a better rise.
