- 1/2 cup Greek yogurt
- 1/4 cup vegetable oil

- Zest of 1 lemon
- 1 cup fresh blueberries
- 1/2 cup streusel topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk together the Greek yogurt, vegetable oil, egg, vanilla extract, and lemon zest in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the blueberries gently.
- Divide the batter evenly among the muffin cups, filling them about 3/4 full. If using, sprinkle the streusel topping on each muffin.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
Notes
For a unique twist, vary the blueberries or add raspberries. Using room temperature ingredients helps achieve a better rise.
