- 4 large eggs
- 1 cup buttermilk

- 1 1/2 cups fresh blueberries, tossed with 1 tablespoon of flour
- 2 1/2 cups powdered sugar
- 1/3 cup lemon juice (for the glaze)
Instructions
- Preheat the oven to 350 degrees F. Grease your 9-by-13 baking dish and line it with parchment paper, allowing an overhang for easy removal later.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl before setting it aside.
- Cream the softened butter and granulated sugar together in a stand mixer with the paddle attachment until light and fluffy.
- Add the eggs one at a time, along with the vanilla extract and buttermilk. Mix on low speed until well integrated.
- Incorporate the dry ingredients gradually, mixing until there are no visible streaks of flour.
- Fold in the lemon juice and zest, then gently stir in the blueberries using a spatula to avoid smashing them.
- Pour the batter into the prepared baking dish and bake for approximately 40-45 minutes. Check doneness using a toothpick— it should come out with moist crumbs.
- Allow the cake to cool completely in the pan. To glaze, mix the powdered sugar and lemon juice together and pour it over the cooled cake.
- Let the glaze harden before garnishing with fresh fruit.
Notes
