Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the softened butter and sugar together until light and fluffy; this takes about 2-3 minutes.
  3. Add the eggs one at a time, then stir in the lemon zest, lemon juice, and vanilla until fully incorporated.
  4. Sift together the flour, baking powder, and salt; fold into the wet mixture just until combined. The dough will be slightly sticky.
  5. Cover the bowl and chill the dough for 15 minutes. Meanwhile, place extra granulated sugar in a shallow bowl.
  6. Roll the dough into 1-inch balls, then roll each ball in the sugar, coating evenly.
  7. Arrange the coated balls about 2 inches apart on the prepared sheets and bake for 10-12 minutes, until the edges are set and the tops are lightly cracked.
  8. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack to finish cooling.
