Instructions
- Prepare the lemon juice (roll lemons and microwave for 10-15 seconds for maximum juice)
- Mix ingredients according to standard cookie preparation
- Add white chocolate chips
- Bake as directed
- Allow proper cooling time for cookies to set
Notes
- Fresh lemon juice provides 3x more aromatic compounds than bottled juice
- If using bottled lemon juice, use about 3 tablespoons as it’s more concentrated
- For vegan version: Use coconut oil instead of butter, maple syrup or agave instead of honey, and dairy-free white chocolate chips
- If cookies aren’t setting properly, add ¼ cup more oats or check liquid measurements
