Delight in the vibrant flavor of lemon paired with the sweet tartness of fresh raspberries in these buttery lemon raspberry bars.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup fresh raspberries
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Combine flour, powdered sugar, and softened butter in a mixing bowl to make the shortbread crust. Press the mixture into the bottom of the prepared baking dish.
  3. Bake the crust for 15-20 minutes or until lightly golden.
  4. Whisk together eggs, granulated sugar, lemon juice, lemon zest, and salt in another bowl. Fold in the raspberries gently.
  5. Pour the lemon raspberry mixture over the baked crust.
  6. Bake for an additional 20-25 minutes or until the custard is set.
  7. Allow to cool completely before slicing into bars.
  8. Dust with powdered sugar before serving.

Notes

For best flavor, use fresh lemons and enjoy these bars with whipped cream or vanilla ice cream. Store in the refrigerator for up to a week.
