Description
Deliciously thick and chewy chocolate chip cookies featuring both semi-sweet and creamy chocolate chips.

- 1 cup (2 sticks) unsalted cold butter, cubed
- ¾ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs (cold)
- 2 ¾ cups all-purpose flour
- 1 tbsp cornstarch
- ¾ tsp baking powder
- ¾ tsp baking soda
- ¾ tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup milk or white chocolate chips
- Optional: 1 cup chopped walnuts or pecans
- Optional: ¼ tsp espresso powder for deeper chocolate flavor
Instructions
- In a large bowl, combine the cubed cold butter, brown sugar, and granulated sugar. Use an electric mixer to cream the mixture on medium speed for 3-4 minutes until light and fluffy.
- Add the two cold eggs to the bowl and continue mixing until thoroughly combined.
- In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, and salt until well blended.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Be careful not to overmix.
- Stir in the semi-sweet and milk (or white) chocolate chips, followed by any nuts or espresso powder if using.
- Using a large cookie scoop, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown and the centers are slightly underbaked. Let cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For thicker cookies, refrigerate the dough for at least an hour before baking. Rotate baking sheets halfway through baking for even results.
