Ingredients

  • 3 boneless skinless chicken breasts, sliced thin
  • 1 quart heavy cream
  • 3 cups chicken broth (low sodium if possible)
  • 4 slices bacon (optional)
  • 4 tablespoons butter
  • 1/2 cup flour
  • 7 oz sun-dried tomatoes, chopped
  • 1/2 onion, diced
  • 8 cloves garlic, minced
  • 1/2 cup basil, chopped
  • 1 cup parmesan cheese, shredded
  • 2 lbs Yukon gold potatoes, peeled and cut into small pieces
  • 2 teaspoons paprika
  • 1/2 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon all-purpose seasoning
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium-high heat until crispy. Once ready, remove and place it on a paper towel to drain, leaving the bacon fat in the pot.
  2. Season the sliced chicken breasts with paprika, Cajun seasoning, garlic powder, all-purpose seasoning, onion powder, and salt. Sear the chicken in the reserved bacon fat until browned on both sides. Once fully cooked, remove the chicken from the pot and set it aside.
  3. Add butter to the pot and sauté the diced onion and minced garlic until they soften and become fragrant.
  4. Sprinkle in the flour to create a roux, stirring constantly until the mixture turns golden brown.
  5. Stir in the sun-dried tomatoes until well combined, then gradually add the chicken broth and heavy cream. Bring this mixture to a gentle simmer.
  6. Add the chopped Yukon gold potatoes and let the soup simmer until the potatoes are tender and the concoction thickens to your liking.
  7. Mix in the shredded Parmesan cheese, stirring until melted and beautifully blended.
  8. Shred the cooked chicken and return it to the pot. Allow everything to simmer together for a few more minutes.
  9. Just before serving, add the chopped basil and give the soup one final stir. If you cooked bacon, crumble it on top for garnishing.

Notes

For an easier process, feel free to prepare your vegetables in advance. If you want extra richness, consider adding an additional splash of cream before serving.
