- 1 pound ground beef or other ground meat
- 1/2 cup rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 egg
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 carrot, sliced
- 1 zucchini, diced
- 1/2 cup green beans, chopped
- Fresh cilantro for garnish
Instructions
- In a bowl, combine the ground meat, rice, diced onion, minced garlic, egg, salt, black pepper, and cumin. Form the mixture into small meatballs.
- In a large pot, bring the beef broth and diced tomatoes to a boil.
- Add the meatballs and let them cook for 10 minutes.
- Stir in the sliced carrots, diced zucchini, and chopped green beans.
- Simmer until the vegetables are tender and the meatballs cook through, approximately 20 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
For extra flavor, consider sautéing the onions and garlic before mixing them with the meat mixture. Store leftovers in airtight containers for up to three days.
