- 1 Zucchini, sliced
- 1 cup Grape tomatoes, halved

- 1 Shallot, sliced

- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare a piece of parchment paper for each serving.
- Slice the zucchini and shallot, and halve the grape tomatoes.
- Place the cod filets in the center of the parchment paper.
- Season with salt, pepper, and thyme.
- Top with zucchini, shallots, olives, and tomatoes.
- Drizzle with olive oil and squeeze lemon juice on top.
- Fold the parchment to create a sealed packet.
- Bake in the oven for 20-25 minutes or until the fish is cooked through and flakes easily.
- Carefully open the packets and serve warm.
