Ingredients

  • 2 Fresh cod filets
  • 1 Zucchini, sliced
  • 1 cup Grape tomatoes, halved
  • 1/2 cup Olives
  • 1 Shallot, sliced
  • 1 teaspoon Thyme
  • 2 tablespoons Olive oil
  • 1 Lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a piece of parchment paper for each serving.
  3. Slice the zucchini and shallot, and halve the grape tomatoes.
  4. Place the cod filets in the center of the parchment paper.
  5. Season with salt, pepper, and thyme.
  6. Top with zucchini, shallots, olives, and tomatoes.
  7. Drizzle with olive oil and squeeze lemon juice on top.
  8. Fold the parchment to create a sealed packet.
  9. Bake in the oven for 20-25 minutes or until the fish is cooked through and flakes easily.
  10. Carefully open the packets and serve warm.
