Ingredients

- 10 cloves garlic, minced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in the cumin and smoked paprika, cooking for an additional 1-2 minutes.
- Pour in the broth, and bring to a simmer.
- Season with salt and pepper, then let cook for 15 minutes.
- Stir in the chopped cilantro and lime juice just before serving.
- Serve warm and enjoy!
Notes
For added heat, you can include a pinch of cayenne pepper or crushed red pepper flakes. The soup can be made ahead and stores well in the refrigerator.
