Description

Ingredients

  • 10 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the cumin and smoked paprika, cooking for an additional 1-2 minutes.
  4. Pour in the broth, and bring to a simmer.
  5. Season with salt and pepper, then let cook for 15 minutes.
  6. Stir in the chopped cilantro and lime juice just before serving.
  7. Serve warm and enjoy!

Notes

For added heat, you can include a pinch of cayenne pepper or crushed red pepper flakes. The soup can be made ahead and stores well in the refrigerator.
