- ½ cup unsweetened applesauce
- 2 large eggs
- ½ cup milk or dairy-free milk
- ⅓ cup vegetable oil or melted butter

Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin with paper liners or cooking spray.
- Mix the rolled oats, flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Whisk together the applesauce, eggs, milk, and oil in a separate bowl until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until combined.
- Fold in chocolate chips or nuts if desired.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Remove from oven and allow to cool in the tin for a few minutes before transferring to a wire rack.
Notes
For added flavor, incorporate a teaspoon of vanilla extract into the wet ingredients. Consider substituting part of the all-purpose flour with whole wheat flour for a healthier option.
