Description

Crispy and delicious Parmesan zucchini fries that are perfect as a snack or side dish, served with creamy ranch dressing.


Ingredients

  • 3 small zucchinis
  • 2 eggs
  • 1 pinch of salt
  • Ground black pepper to taste
  • 2 cups Japanese panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • Ranch dressing for serving

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Slice the zucchinis into 3-inch lengths and 1/2-inch thick strips.
  3. Mix the eggs with a pinch of salt and 3 dashes of ground black pepper in a bowl, beating them well.
  4. Combine the Japanese panko bread crumbs with the grated parmesan cheese on a large plate or container.
  5. Dip the zucchini strips into the beaten eggs, shaking off any excess.
  6. Roll them in the panko and parmesan mixture, pressing gently to coat.
  7. Transfer the coated zucchini strips to a parchment-lined baking sheet.
  8. Bake for 20 to 25 minutes, rotating halfway through until golden brown and crispy.
  9. Serve immediately with ranch dressing for dipping.

Notes

For an extra crispy texture, drizzle a little olive oil over coated fries before baking. Experiment with different seasonings and cheeses for variations.
