- 3 small zucchinis
- 2 eggs
- 1 pinch of salt
- Ground black pepper to taste
- 2 cups Japanese panko bread crumbs
- 1/2 cup grated parmesan cheese
- Ranch dressing for serving
Instructions
- Preheat the oven to 425°F (218°C).
- Slice the zucchinis into 3-inch lengths and 1/2-inch thick strips.
- Mix the eggs with a pinch of salt and 3 dashes of ground black pepper in a bowl, beating them well.
- Combine the Japanese panko bread crumbs with the grated parmesan cheese on a large plate or container.
- Dip the zucchini strips into the beaten eggs, shaking off any excess.
- Roll them in the panko and parmesan mixture, pressing gently to coat.
- Transfer the coated zucchini strips to a parchment-lined baking sheet.
- Bake for 20 to 25 minutes, rotating halfway through until golden brown and crispy.
- Serve immediately with ranch dressing for dipping.
Notes
For an extra crispy texture, drizzle a little olive oil over coated fries before baking. Experiment with different seasonings and cheeses for variations.
