- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces, about 1 to 1 & 1/2 cups)
- 1/3 cup peach preserves
- 3 tablespoons sanding sugar
- 1/4 teaspoon ground cinnamon
Instructions
- Start by preheating your oven to 375°F (190°C).
- Line your baking sheets with silicone liners or parchment paper.
- Whisk together the flour, salt, and baking soda in a medium bowl.
- Beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- Gradually reduce the mixer speed to low and introduce the flour mixture, mixing just until combined.
- Fold in the diced peaches and peach preserves until mixed thoroughly.
- Drop spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Combine the sanding sugar and ground cinnamon in a small bowl and sprinkle over each cookie.
- Bake for 11 to 13 minutes until golden brown and set.
- Cool the cookies on the pans for 5 minutes before transferring them to wire racks to cool completely.
Notes
For best results, chill the dough between baking batches and store cookies in an airtight container.
