  • 2 tablespoons all-purpose flour
  • 2 tablespoons light or dark brown sugar (for the topping)
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter (cold and cut into cubes)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped peaches, brown sugar, vanilla or almond extract, and cornstarch in a mixing bowl, then set aside.
  3. Mix the oats, flour, brown sugar, cinnamon, and salt in a separate bowl.
  4. Cut the cold butter into the oat mixture until crumbly.
  5. Transfer the peach filling into a greased baking dish.
  6. Sprinkle the oat topping over the peach filling.
  7. Bake for approximately 25 to 30 minutes, until the peaches bubble and the topping is golden brown.
