- 1 cup chopped peeled peaches (about 1.5 to 2 medium peaches)
- 1 tablespoon light or dark brown sugar
- 1/2 teaspoon vanilla or almond extract
- 1 teaspoon cornstarch
- 3 tablespoons old-fashioned rolled oats
- 2 tablespoons all-purpose flour
- 2 tablespoons light or dark brown sugar (for the topping)
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 2 tablespoons unsalted butter (cold and cut into cubes)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped peaches, brown sugar, vanilla or almond extract, and cornstarch in a mixing bowl, then set aside.
- Mix the oats, flour, brown sugar, cinnamon, and salt in a separate bowl.
- Cut the cold butter into the oat mixture until crumbly.
- Transfer the peach filling into a greased baking dish.
- Sprinkle the oat topping over the peach filling.
- Bake for approximately 25 to 30 minutes, until the peaches bubble and the topping is golden brown.
Notes
