Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar in a mixing bowl until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Combine the all-purpose flour, baking soda, and salt in another bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Place well-drained pineapple rings on the prepared baking sheet, spacing them evenly.
- Drop spoonfuls of cookie dough around each pineapple ring, gently pressing to flatten slightly.
- Sprinkle the additional sugar over the dough and pineapple.
- Bake for 10-12 minutes or until the cookies turn golden brown on the edges.
- Allow cooling slightly before transferring them to a wire rack to cool completely.
