- 2 cups diced sweet potatoes
- 6 large eggs
- 1 cup spinach (or your favorite vegetable)
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Boil sweet potatoes in a pot of water for about 5 minutes, until tender. Drain and let cool.
- Whisk the eggs in a large bowl and season with salt and pepper.
- Fold in the cooked sweet potatoes and spinach (or other vegetables).
- Grease a baking dish with olive oil or cooking spray.
- Pour the mixture into the baking dish, spreading it evenly.
- Sprinkle shredded cheese on top, if desired.
- Bake for 25-30 minutes or until the eggs are set and the top is golden brown.
Notes
