Ingredients

  • 6 large eggs

  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil sweet potatoes in a pot of water for about 5 minutes, until tender. Drain and let cool.
  3. Whisk the eggs in a large bowl and season with salt and pepper.
