Instructions

  1. Combine the almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl.
  2. Mash the fresh or thawed raspberries with a potato masher or fork until they reach your desired consistency.
  3. Fold the mashed raspberries into the chia mixture, distributing the fruit evenly.
  4. Cover the bowl and refrigerate for at least 2-3 hours, preferably overnight, to allow the pudding to set.
  5. Stir the pudding before serving it in bowls or jars, topped with additional raspberries, sliced almonds, chopped nuts, or shredded coconut.
