- 1/2 cup fresh or frozen raspberries (plus more for topping)

- Shredded coconut
- Extra drizzle of maple syrup
Instructions
- Combine the almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl.
- Mash the fresh or thawed raspberries with a potato masher or fork until they reach your desired consistency.
- Fold the mashed raspberries into the chia mixture, distributing the fruit evenly.
- Cover the bowl and refrigerate for at least 2-3 hours, preferably overnight, to allow the pudding to set.
- Stir the pudding before serving it in bowls or jars, topped with additional raspberries, sliced almonds, chopped nuts, or shredded coconut.
- Drizzle with extra maple syrup if desired.
Notes
Letting the pudding rest overnight enhances flavor and texture. Adjust sweetness and toppings to your preference.
