- 8 oz rice noodles
- 1 cup protein (chicken, shrimp, or tofu)
- 2 cups mixed vegetables (bell peppers, carrots, broccoli, etc.)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Green onions for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large pan or wok, heat sesame oil over medium heat.
- Add garlic and ginger, sautéing for 1 minute.
- Add your chosen protein and cook until no longer pink.
- Toss in the mixed vegetables and stir-fry for about 3-5 minutes until tender-crisp.
- Add the cooked noodles and soy sauce, stirring to combine well.
- Cook for an additional 2 minutes, then remove from heat.
- Serve hot, garnished with green onions.
