Ingredients

  • 8 oz rice noodles
  • 1 cup protein (chicken, shrimp, or tofu)
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Green onions for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat sesame oil over medium heat.
  3. Add garlic and ginger, sautéing for 1 minute.
  4. Add your chosen protein and cook until no longer pink.
  5. Toss in the mixed vegetables and stir-fry for about 3-5 minutes until tender-crisp.
  6. Add the cooked noodles and soy sauce, stirring to combine well.
  7. Cook for an additional 2 minutes, then remove from heat.
  8. Serve hot, garnished with green onions.
